One night last week, we had some guests over for dinner which always gives me an excuse (like I need one) to bake! I have found a delicious chocolate cupcake recipe here. So far I have made this chocolate cupcake recipe with a variety of frostings but I decided to get a little inventive. I had made the cupcakes with peanut butter frosting before and loved how they tasted but I also had some bananas on hand and some banana frosting was really sounding good. Then I thought, why not make peanut butter banana frosting! I am so glad I had that epiphany because it turned out oh so delicious! I love buttercream because it’s so easy to adapt and really lets me be creative with my frosting. So, here is the little recipe I came up with:
Peanut Butter Banana Buttercream
1/2 cup butter- softened some
2/3 cups creamy peanut butter
1/2 mashed yellow (not brown) banana (about 2-3 tablespoons)
2 cups confectioners sugar
1 tablespoon milk
Beat butter and peanut butter until smooth. Add in mashed bananas a table spoon at a time and keep on mixing until nice and smooth. Add in sugar a cup at a time to keep it from poofing powder everywhere and beat it nice and fast until it’s thick frosting. Add in a tablespoon of milk (that’s how much I needed) or more until its your desired consistency.
There you have it! Simple, quick and yummy… my favorite!
